Quiche, Duck Eggs, Cheese, Shallots and Bacon


Crust

Ingredients

1 cup flour
1⁄2 teaspoon salt
1⁄4 cup olive oil or 1/4 cup canola oil
1⁄4 cup ice water

Mix flour and salt with fork. Beat oil and water with whisk or fork to thicken. Pour into flour and mix till incorporated. Press into 9" pie crust. Fill with quiche mixture and bake at 400F for 25 minutes or until done.

Filling

1 Prepared Quiche crust
3 Duck Eggs
1/3 Cup Sour cream
1/2 Cup Whole Milk
5 oz shredded cheese, I used Hook's Sweet Constantine
1/2 Package of Bacon
1 Shallot, diced
1/4 tsp Salt
1/8 tsp Pepper

INSTRUCTIONS
Preheat oven to 400° .
Cook the bacon until it a little under cooked. Leave a tablespoon of the grease in the pan. Drain bacon on paper towels and chop when cool.
Heat the grease up over medium heat. Add the diced shallot and saute for 5 minutes until translucent.
Combine the bacon and shallots and spread them in the bottom of the pie crust.
In a separate bowl, mix together the duck eggs, sour cream, whole milk, salt, and pepper. Once combined, mix in the shredded cheese.
Gently pour the mixture over the bacon and shallots. Spread evenly.
Bake for 25-30 minutes, until a toothpick comes out clean when inserted and removed. Cut and serve immediately.heat.

Variations

Saute 1/4 cup of red onion for 4 minutes
Toss 3 cups chopped spinach in to wilt, stirring 2 minutes
1 cup grated cheddar cheese
