Parmesan Turkey Breast Skewers

These can be made on mini skewers to be served as an appetizer. Do not over cook as the turkey can easily dry out.

Ingredients

  • (2 lbs) Turkey Breast
  • (2 TBS) Olive Oil
  • (8 TBS) Butter
  • (10 cloves) Garlic minced
  • (1/2 cup) Parmesan, grated
  • (1 1/8 TBS) Hot sauce
  • (2 tsp) Red pper flakes
  • (1/3 cup minced) Fresh Parsley
  • (2 tsp) Paprika
  • (1 tsp ground) Sage
  • (1 tsp) Garlic Powder
  • (1 tsp) Onion powder
  • (1/2 tsp) Salt
  • (1/2 tsp) Pepper

Directions

Preheat oven to 450

  • Soak skewers for 30 minutes
  • Make the butter sauce by 
    • Melting the butter with the garlic. To this add the parmesan, hot sauce, red pepper flakes, parsley. Stir to combined. Set aside.
  • Cut the turkey into 1 1/2" x 3" strips
  • Mix paprika, sage, garlic powder, onion powder, saly and pepper in a small bowl. 
  • Put the turkey and the seasoning mix into a bowl with the olive oil, mix to coast well.
  • Thread coated turkey onto skewers taking care to pack the skewers tightly so as to not have space between the pieces. This will help ensure that your turkey stays moist.
  • Line a baking sheet with parchment for easy cleanup. 
  • Arrange the skewers snuggly in a single layer on the parchment
  • Baste the skewers with 1/3 of the sauce, turn the skewers over and baste with the other 1/3 of the sauce.
  • Bake 7 minutes, flip, and cook for another 7 minutes
  • Broil just to brown
  • Remove from oven and baste with the last 1/3 of the sauce, 
  • Let rest 5 minutes before serving
